I've driven Toyota's all my life and never once been in a vehicle that does anything automatic beyond turning on the lights when it gets dark. Maybe you just need to avoid the Toyota model you bought.

Every single new Toyota from 2017 on has adaptive cruise control and emergency braking assistance. You can disable the EBA and use reg cruise control but it’s all on by default.
